Grape: 50% Croatina; 25% Cabernet Sauvignon; 25% Barbera

Altitude of the vineyard and type of soil: 310 meters/1,000 ft AMSL; Silt-clay soil
Training system: Modified Guyot system
Yield: 70 – 80 hl/ha or 3 tons/acre
Fermentation: 12-15 days on the skins
Vinification: The grapes are harvested by hand in boxes, separated from the stalks and left to macerate on the skins for about 10- 15 days. At the end of the fermentation process, the yeasts are stirred weekly through until January.
Maturation: The Cabernet Sauvignon portion undergoes malolactic fermentation in oak barrels (tonneaux)
Alcohol: 14% vol.
Residual sugar: 3 g/l
Total acidity: 5.50 g/l
Total sulfur dioxide: 80 mg/l

This ruby red wine with brilliant reflections offers an intensity in which the pepper, licorice and strong tannins of the Cabernet Sauvignon are balanced by the Croatina grapes and enriched with the raspberry and cherry notes of the Barbera grapes. This wine ages well and can be cellared.
